Judean Hills Ancient Terroir Craft

The
Brewery

Perched along the ancient stone terraces of the Judean Hills, we brew with native mountain water, wild yeast strains, and locally harvested botanicals. Every batch reflects the unhurried rhythm of the high ground, blending Old World fermentation traditions with the raw character of the Mediterranean Levant.

The
Terroir

  • Limestone
  • Altitude
  • Sun
  • Wild Thyme
  • Terraces
  • Cool Nights

Steep limestone ridges, intense daytime sun, and sharp night temperature drops shape everything rooted in this soil. From dense, sun-ripened Medjool dates to wild mountain botanicals, our terroir provides a clean minerality and layered depth that cannot be recreated in an industrial tank.
